Taco Lettuce Wraps


I've been trying out some new recipes, since it's summer break and all. I've got to have some quick, easy, & tasty recipes up my sleeve since I start grad school in the fall. This checks all three off. And you know if I can cook it, it's easy to make because I'm no chef. Hao fills that role in our family. I'm the one who comes behind and cleans up the mess from the meal. 

Anywhoo... here's the recipe: 

Materials:
1. 1 LB of beef or turkey
2. 1 packet of taco seasoning
3. 1 head of lettuce (You could also use romaine hearts or any other green, leafy veggie if you want something with more nutrients.)
3. shredded cheese (My local Harris Teeter has the legit Mexican cheese that is delicious!!)
4. any other toppings you want to use (tomato, onions, sour cream/greek yogurt, etc.)

Steps:
1. Brown your meat.
2. While meat is cooking, wash and cut up lettuce.
3. Drain grease from meat.
4. Add taco seasoning & stir in well.
5. Cook meat and seasoning for a few more minutes on low to make sure seasoning is throughly soaked through meat.
6. Put meat in lettuce pieces and top with whatever you'd like.
(Basically, cook it like regular tacos, but use lettuce or any leafy greens instead of shells.)

Total time: about 15 minutes

The lettuce wraps are a great alternative to taco shells!

summer sandwich

this is my favorite summer time lunch :)  

here's whatcha need:
1. sandwich meat: i have honey ham
2. cheese: i have swiss here
3. mayo: if you don't want to use mayo, you could also use guacamole or hummus

4. bread: i use sandwihxh thins. that way the bread doesn't get stuck in the roof of your mouth... and it's less calories. win-win.

5. broccoli sprouts: gives ya some veggies, and they are super good for ya! 


here's watcha do:
1. spread the mayo on the bread & add broccoli sprouts 

2. add cheese & meat {i add a piece of cheese & two pieces of meat on top of each slice of bread}

3. aaaaaand you're done! 

you'll notice the sandwich is on a paper towel. why dirty a plate when you can just use a paper towel? #lazy

pizookie. {recipe & tips}

recently, my the girls from my small group came over and we had a junk food party while we decided what book to read next. I made pizookie {pie & cookie} for the party!
a gooey pizza cookie! 
what you need:
1. cookie dough {family size or the tub like in the picture}
2. cake pan
3. butter {optional- only to grease the pan}
4. an oven {duh!}

steps: {easiest thing EVER!}
1. heat your oven based on the directions of the cookie dough you purchased.
2. grease your pan
3. put the cookie dough in the pan. since i had a container, i spooned it in. if you have the tube kind, you can just squeeze it in.
4. put it in the oven! baking-time-wise, you'll really want to keep an eye on it! if you have a thinner amount of dough in the pan, you can generally cut the time recommended on the container in half. since mine was thicker, it took about the same amount of time as the recommended cooking time. lets just say to stay by the oven because you want to gooey! 
5. cover with vanilla ice cream and eat while it's hot!! 

we couldn't wait to eat it! you can see how gooey the center it!
i served the ice cream separate rather than piling it on in the pan. i've seen it eaten with ice cream all in the pan and everyone eating out of it! so goooood!!
